Roast the Vegetables
Preheat your oven to 200°C (400°F).
In a large bowl, toss the chopped mixed vegetables with olive oil, salt, pepper, and Italian seasoning (if using), until evenly coated.
Spread the seasoned vegetables in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized. Remove from the oven and set aside.

Cook the Pasta
While the vegetables are roasting, cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large mixing bowl, combine the cooked pasta and roasted vegetables.
